I miss Fall in the Midwest. Southern Cali can’t top the falling colorful leaves. But, the ocean and sun can sure top the Midwest in February. We try out here… I drove past a pumpkin patch on the I-5, It looked wrong. I also saw a pumpkin with Trump’s face in it…Weird.
Everyone is raving about pumpkin right now. I roasted a whole pumpkin for this recipe. If ya got the time, roast the pumpkin! It’s so much better then canned. I try to stay away from cans as much as possible. Canned food is lifeless and has no prana (energy). Coconut milk is usually the only canned thing I buy.
Announcement! Wild Vedic Living is going gluten and dairy free! Yep. I’m striving to eat in that way so I figured you should know that all the recipes will be too. I’m even cutting down on most grains. This curry would normally be served with basmati rice, but I made a cauliflower rice that is amazing. Wild Vedic Living is a fusion of Ayurvedic food and the 20th century American diet. I actually found that I gained weight switching from the Paleo diet to an Ayurvedic diet. My body can not handle all the grains. I’ll of course provide ingredient substitutions for all my recipes so you can alter the dish for you specifically!
Root veggies is what’s up! I went to my favorite co-op and bought an acorn, butternut, and spaghetti squash. It’s a party!
I ate this dish all day yesterday. Holy hell is it good. I even brought some over to my friends because I had way to much!
