Every time I go to the grocery store I choose a different squash, or a few. This time it’s Delicata, also known as the Bohemian Squash. First time cooking with them and they are so flavorful and rich. I’m really into squashes and root veggies right now. I just wanna stuff em and roast em. Each one is weirdly shaped and screaming for someone to cook them up and see what they have to offer.
If a butternut squash and a spaghetti squash had a baby…you would get a Delicata. They are rich, creamy, and easy to work with. You can even eat the skin. In fact, I suggest you do because the skin makes the dish look pretty and its thin, so it is easy to digest.
Squash should be eaten in the fall and winter months because they are so nourishing and grounding. This squash can be the meat of a dish. Delicata is a great source of fiber, potassium, Vitamin C & B, and magnesium. Be sure to use plenty of ghee or coconut oil because squash can dry out the digestive tract.
I made this dish for some loved ones and it was quiet wonderful to feed them. Nothing brings people together like food. We all eat so why not do it together with some healthy organic ingredients to help us shine and love one another.
